Italian Bride Soup
This healthy, Italian soup is so good to have around for the week and one of my favorites I learned from my Mother in law, Mom MacEachen.
Mondays are for prepping amazing, healthy meals like this to have on hand for us all.
Give this one a try!
2 (46 oz) cans of chicken broth
2 (10oz) bricks of frozen chopped spinach
1/2 to 1 cup cup acini di Pepe pasta
Bring to a boil and cook (about 9 min)
Beat up 2 eggs with a fork and add Parmesan cheese (from the green can). Add to soup.
Enjoy!
