Garlic Chicken Chimichurri

He BACK—and I’m ready to bring some fresh new (flavorful) foods to bring your family back to the table in 2024.

If garlic is your jam—this one’s for you!

To make the chimichurri combine 1/2 cup finely chopped parsley, 5 garlic cloves minced, 1/4 cup red wine vinegar and 1/4 tsp red pepper flakes in a bowl with 1tsp salt and 1/4 tsp pepper. Mix and set aside. Clean 1-2 lbs chicken breasts trim and pound thin. Season with salt and pepper and (med-high heat) grill them up for 3-5 min a side. Let them rest once done for 5 min and then slice up and spoon chimichurri mixture over top.

We ate it alone but would be delicious in a taco, over a salad or with a side of rice and roasted veggies.
